Bruschetta Chicken Bake
Easy one pan chicken dinner to feed the whole family.
Ingredients
- 1 1/2 lb. chicken breasts boneless, skinless, cut into bite sized chunks
- 1 28oz. can whole tomatoes
- 1 package Stove Top Stuffing chicken or turkey flavor
- 2 cloves garlic minced
- 1 tablespoon dried basil
- 1/2 teaspoon salt
- 1 cup mozzarella cheese shredded
Instructions

Preheat oven to 400 degrees.

Break up tomatoes into small pieces. Add the minced garlic.

Add the stuffing to the tomatoes Stir together until the stuffing is moistened from all the liquid of the tomatoes.

Place uncooked chicken pieces in a 9×13 pan. Season with salt. Sprinkle with dried basil and cheese. Top with stuffing and tomato mixture.

Bake for 30 minutes at 400 or until chicken is cooked throughout. Serves 6. Serve with a green salad and fresh fruit.
Recipe Notes
When tomatoes are in season, you can use fresh tomatoes. Just remove the skins first in a hot water bath.
